Honey has been considered a ‘gift from the gods’ since ancient times for its unique and delicious flavour and health properties.
Taking inspiration from traditional mead recipes, we infuse hops, herbs, flowers and spices, then harmonise the flavours with different artisan honeys, each carefully selected for its distinctive taste and aroma. In the same way wine tastes different depending on the grape and terroir, honey has a unique character depending on the flower nectar bees collect. Information about the type of honey used is included on the product label showcasing the best of British ingredients with every sip.

Heather honey is the heavy-weight of the honey world. Its rich, floral, subtle-woody aroma and taste brings out the smokiness and herbaceous flavours of this elegant blend.
Where it comes from:
We use rare wild heather honey: the honeybees feast on the nectar of the pungent flowers only found on the moors of England, Scotland and Ireland.

Adding a spoonful of heather honey to your cup of coffee will give it a hint of smokiness. It also pairs well with a nutty, hard cheese like Gruyere, the sweetness combining really well with the saltiness.

This is a surprisingly rich, bold, floral honey, given the delicate apple blossoms it’s collected from. The mild sweetness is balanced with soft but bitter notes, enhancing the warm ginger and cardamon spices of the blend.
Where it comes from:
Our apple blossom honey comes from British bees who enjoy the blossoms of the many apple orchards around the country. The oldest orchard is thought to be over 400 years old.

We knew it needed an intense, flavoursome honey for this hoppy, fresh blend. Wildflower honey is both fruity and fragrant, with lingering notes of green apple and mint, making it the perfect partner for our original variety mead.

Wildflower honey is polyfloral which means the honey bees have free range of the wild blossoms to forage from.

The seasons and weather can affect the flavour of honey. If you left wildflower honey until the winter months, you’d probably find it tasting much richer, with notes of molasses.
